The Perfect Tenderloin Steak

I love a steak while I am on Plan ZReduction. I have pretty much perfected my technique using a cast iron skillet but learned this method by asking a French restaurant how they did theirs.

Beefy Chili with Roasted Poblanos

Just in time for all the big football games coming up. My newest chili. LOVE this stuff! Big YUM.

Sausage with Peppers and Onions

This recipe can be made in a pinch when you take advantage of the pre-cut produce in the grocery store. That way if you are cooking for just yourself you don’t buy a lot of ingredients that will go to waste. It’s a little more expensive by the pound, but it’s cheaper overall not to have the leftovers if you aren’t going to get to them in time to eat them before they spoil.

Sloppy Joes

You could call this the “adult version” of Sloppy Joes.  It does have some ZIP to it. Don’t be intimidated by the length of the ingredients list. The recipe is worth it. And you probably have most of these ingredients in your pantry.

Roasted Prime Rib

When I was a kid this was served at very special meals. My mother made hers plain. I had no idea how incredibly fabulous this meat could taste until I started adding the meat rub!

Lamb Kebabs (Z2 Version)

Marinating lamb beforehand adds a depth of flavor that can't be beat. And when it's grilled, it's phenomenal. So, if you like lamb, this recipe is a home run.

Steak Kebabs

Depending on how you cut your veggies and arranged them on the skewers you might be having more than one kebab. Your meal on sticks!

Seared and Roasted Burgers

My favorite technique for cooking low-fat burgers is to quickly sear the burger and finish it by roasting it in the oven. Here’s the recipe for seared burgers that are then oven-roasted.

Dieter Claire’s Taco Seasoning

From Dieter Claire: Make this in bulk and store it in a jar. It's less expensive than taco seasoning packets and has no fillers. Plus, I can tweak the flavors to suit my family.

Lockdown Chili (Z2 Version)

What better time to have a spicy chili than when I am in lockdown, practicing social distancing.

Roasted Red Pepper and Beef Chili

Okay, so I opened my pantry and saw a jar of roasted red pepper strips. I thought… I could make a new chili with these! So here you have it.

Coffee-Crusted Steaks with Tomato Salad & Caramelized Onion “Jam”

Coffee on a steak? Heck yes! This combo is a steak-house classic that will leave your mouth watering for more but won't keep you up all night from a caffeine buzz.

Texas Style Chili (EASY)

This chili is tasty but not overly spicy.

International Steak Marinade

A great but simple marinade contributed by Dieter Insider Amy.

Creole Meatloaf

This is a wonderfully moist meatloaf. It has a kick from the Cajun spices but not all that much and you can adjust according to taste. This transports well to work.

Barbecue Meatloaf

I had a hankering for ribs. I ordered some as an appetizer at a restaurant and they just didn’t cut it. I could not get the craving out of my head, so I came up with the barbecued meatloaf recipe.  Hope you love it.

Italian Burgers

To make this burger taste extra special, consider topping it with a soup spoonful of spaghetti sauce. You can find one with no sugar in the spaghetti sauce aisle.

Frito Meatloaf

This meatloaf makes six servings. When you serve it, remember that your crunch item is already included, so no breadstick or crackers with this meal.

The Deconstructed Chicago Hotdog in Honor of the 2016 World Series Champs – The Chicago Cubs

It took the Cubs 108 years to win the World Series. It only took VP Anger Management 7 years to “invent” this recipe.

Famous Burger Meatloaf

This is a “Whopper” of a meatloaf, designed to taste like the famous burger. I hope you enjoy.
