Creamed Spinach

Creamed spinach makes a wonderful, old-school side dish or you can use it as a dip. Serve with Melba rounds and just reuse your rounds so you don’t eat more than 3 or 4.

Onion-Poblano Saute

This is mild, full of flavor and a huge hit around my house. It would also be wonderful served with a steak or a meaty fish, too.

Fried Apples

I serve this warm with cinnamon buttered pecans on top but would also be perfect as a topping on the almond pound cake.
