Pork Tenderloin Sandwiches with Amazing BBQ Sauce

I have to say I “woofed” my dinner! I have never said that in my life, but I found this sandwich to be incredible! My husband took seconds on the sauce before he even took a bite of his sandwich!

Italian Pie Crust Calzone

Once your weight has solidly stabilized you can handle something like this; just not every day.

Bacon Avocado Toast

Making avocado toast is a very free-form exercise. You can build it the way you want to; that's what makes it so easy - and delicious!

Italian Sausage Tart

This meal is good for breakfast, lunch or dinner. With a side salad it makes a nice brunch offering too!

Maple Pork Tenderloin

Once you get your system cleaned out with ZReduction and you stabilize in ZReboot, you can “go a little wild” once in a while and venture out into the world of a bit of sugar. I took a recipe that called for an entire cup of syrup (yep, you read that right) and totally redesigned so it could be eaten in ZReboot 3.5.

Meaty Jambalaya

Jambalaya is normally a rice-centric dish that is chock-full of carbs. I redesigned this dish so you can fit some rice into your life without blowing your diet.

Summer Veggie Casserole with Pepperoni

This dish is easy to put together. The spouse or the kids can help chop and it comes together fast. You can be doing other things while your dinner bakes in the oven. Makes great leftovers, too.

Badger Brats

I made this ‘good luck’ recipe for the Championship Final for basketball. The Wisconsin Badgers played the Duke Blue Devils. Brats are such a Wisconsin thing it seemed like a great theme.

Well, the brats didn’t bring any luck to the Badgers, but neither did watching the game from our lucky red sofa! Badgers lost. That doesn’t take away from the flavor of the brats though. They are a BIG YUM.

If you decide to have a second one, skip the bread. Just pile the stuff on your plate and use your fork.

Italian Sausage Zucchini Casserole (with Pasta)

This dish is Italian comfort food. I curl up on sofa with a bowl of this and watch a movie. You can go totally low-carb with this one and make it without the pasta. Tastes just as good. This also makes a great casserole addition to a pot luck party.

Creamy Pasta Bake with Italian Sausage

This is a dreamy, smooth pasta dish that uses little pasta, but is still big on taste. This dish can be easily doubled and baked in a 9" x 13" pan for a larger crowd.

Pizza Lasagna

This “light on the carbs” lasagna can be made with your favorite pizza ingredients. I just made this one with some of my husband’s favorites.

Open Face BLT

I’ve had a hankering lately for a BLT. My mother used to make BLT’s when it was really hot outside. So at the end of summer I seem to have to have my BLT.

Chicken and Shrimp a la Lousianne

This recipe can be doubled and tripled for larger crowds. You can even make it ahead and just reheat on the big day. It actually tastes better on day two or three, after the flavors "ferment" a bit.

Cuban-Marinated Pork Tenderloin and Caribbean Black Beans with Plantain, Pineapple and Serrano Salsa

This is a rather long recipe because there are three parts but, believe me, this is so EASY. It's a great meal for summer and all year long.

Pork Loin Roast with Chunky Mango-Peach Chutney

Today’s recipe is great for warm weather. Eating fruit with meat just feels like summer. You can bake or grill this pork loin. You can serve the chutney warm, room temp or cold.

Open-Face Grilled Cheese Sandwiches

Who doesn’t love grilled cheese? Yum!

Baked Pasta with Sausage, Tomatoes and Mushrooms

This dish can be made a day ahead and reheated.

Spring Pasta

My favorite pasta is papardelle. I don’t have pasta very often (maybe 4 times a year at most) so when I do, I go all out and do a cream sauce to counteract the glycemic uptake of the pasta.

Sweet and Peppery Pork Roast

This is a lovely twist on a regular pork loin roast. There is little honey in this and by Z3.5 your liver is operating properly again and will tolerate this bit of natural sugar with no problem.
