Chicken Under a Brick

One of my favorite French bistro dishes is chicken under a brick. I decided I had to figure out how to make it myself. Most places make it in a wood burning oven. I don't have one so I had to make adjustments. It worked. I hope you like it and enjoy it.

Creole Meatloaf

This is a wonderfully moist meatloaf. It has a kick from the Cajun spices but not all that much and you can adjust according to taste. This transports well to work.

Balsamic Chicken (Braised or Slow Cooker)

This is a super easy meal to make; made even easier by doing it in your slow cooker. Simple Italian.

Bacon and Veggie Quiche

This a great, crustless quiche that can be eaten as a lunch or light dinner with Plan Z.

Italian Burgers

To make this burger taste extra special, consider topping it with a soup spoonful of spaghetti sauce. You can find one with no sugar in the spaghetti sauce aisle.

Frito Meatloaf

This meatloaf makes six servings. When you serve it, remember that your crunch item is already included, so no breadstick or crackers with this meal.

Zucchini Lasagna

This lasagna has no noodles. Standing in for the noodle layers are zucchini sliced the long way.

Anniversary Chicken Tenders

Anniversary chicken is a rather famous recipe. Been around a long time. I don’t have any idea, though, where the name came from. I made my own twist on this recipe. Most often it’s made with chicken breast. I made mine with chicken tenders.

Brown Butter-Sage Cream Sauce

Best served over ravioli; especially a pumpkin ravioli or a butternut squash ravioli.

Zucchini Noodles (Zoodles)

You’ll never miss the pasta if you start serving these with your Italian dishes. They are pretty, too!

Famous Burger Meatloaf

Maple Pork Tenderloin

Once you get your system cleaned out with ZReduction and you stabilize in ZReboot, you can “go a little wild” once in a while and venture out into the world of a bit of sugar. I took a recipe that called for an entire cup of syrup (yep, you read that right) and totally redesigned so it could be eaten in ZReboot 3.5.

Cauliflower Mash

The touch of nutmeg in here really makes the dish. Try this as a substitute for mashed potatoes. It’s really quite delightful

Jambalaya is normally a rice-centric dish that is chock-full of carbs. I redesigned this dish so you can fit some rice into your life without blowing your diet.

Buttered Mushrooms

Dieter Rebecca first had this warm and rustic side dish while in Ireland on a road trip in 1994. These mushrooms where in every Irish B&B Dieter Rebecca visited. She loved the recipe so much she recreated it for Plan Z! Hope you enjoy.

Shrimp de Jonghe with Zucchini Noodles

I Zolafied this decadent Italian appetizer by minimizing the bread crumbs and using zucchini noodles instead of pasta.

Turkey Fricassee

I love to take the leftover turkey and transform it into something different. French comfort food. BIG YUM.

Broccoli Cheese Brunch Pie

Breakfast. Lunch. Brunch or even a light dinner. You can even serve this as a side dish at a family event. Even the kids who don’t like veggies will like this one.
