Talk about easy to make. This soup is done in a flash. If you’re like me you’ll make a triple batch. You can freeze the portions.

Season to taste. I put a fair amount of pepper on top. My husband loves pepper on top of soup. Garnish with the asparagus tips and serve with a protein.

Two of my favorite Cajun dishes are etouffee and Marengo. Like lots of Cajun food they are basically stews. Simple, flavorful meals.
Mayan Chicken Stew

This is an amazingly easy dish to make. On a diet like this Mexican or South American food would not normally be possible but this tastes authentic and has no rice or potatoes.

Shrimp and Chicken Creole

This tastes pretty darn authentic. Creole… or low country food. If you want it spicy you might consider adding a bit of cayenne (1/4 tsp) or the same amount of red pepper flakes. An final alternative would be to put a bottle of Tabasco on the table for people to add their own.

I have designed several chili recipes for Plan Z. This is one of those that is very straightforward and simple. It doesn’t even have a lot of ingredients.
Italian Pepper Steak in a Crock Pot
This is a great crock pot recipe. Super simple but really tasty.
Tomato Steak Stew
Made this tonight and was very happy with it – it would count as your vegetable and your meat although you could definitely add a green salad. I found it to be very filling.
Beef & Vegetable Stew
This stew will contain your meat and vegetable portion, serve with salad greens for a complete meal.
Beef and Vegetable Soup
Tastes very much like the traditional version but this one doesn’t include higher carbohydrate vegetables like carrots and potatoes. Still quite delightful, though. Brings back memories of grandma.
Roasted Poblano and Ground Sirloin Stew
Have a bottle of hot sauce on the side if anyone wants theirs with more heat. This is intentionally very mild for those that don’t usually eat Mexican food.
