Pumpkin Chiffon

Feed this to the kids (and adults) instead of ice cream.

Snickerdoodle Pie Crust

You’ll be amazed! When this comes out of the oven, it smells just like the famous cookie! Use this in any pie that does not need to be baked.

Pumpkin Ice Box Pie

Just 10 minutes to bake the crust and the rest sets up in the refrigerator. EASY!

My Mother’s Apple Crisp

There’s something about the potential of smelling apples baking with cinnamon and nutmeg that conjures up fond memories of my mother in the kitchen. She taught me as a small girl to make apple crisp so I did it often. This also makes a wonderful little breakfast the next day.

Ricotta Cream with Strawberry Compote

AKA VP Anger's 65th Birthday Dessert. This super-simple, light and dreamy dessert is easy enough for a weeknight treat and fancy enough to serve to a dinner party.

Peanut Butter Yogurt Swirl

This recipe works for breakfast or for dessert. Really satisfying! A great treat and super fast!

Fruit Parfait

This is a must try, a wonderfully light and healthy dessert.

Almond Flour Pie Crust (or Tart Crust)

This is a pretty popular low carb pie crust recipe. I adjusted it to Zolafy it. Be sure to get some of the new sugar substitute. The Swerve people even make a powdered version you can use to make frosting!

Chocolate Peanut Butter Squares

Think peanut butter cups. The sugar has all but been taken out of these little treats. And that’s the operative word. Little. Neither kids nor adults need big treats. One or two of these can satisfy that craving in anyone. They are divine. Serve one to your kid as a treat after dinner or set out a platter of them at a dinner party. The package of two Reese’s Peanut Butter Cups has 24 grams of carbs. One of these has 4.9 grams of carbs.

Southern Peach “Pie”

I call this “pie” because it tastes like the middle of a peach pie; just no crust. I call it Southern because the Southerners are known for putting cinnamon and nutmeg in their peach pie recipes.

Yellow Cupcakes

I have not perfected low carb baking yet but these are pretty good. They have a little denser texture than a light and fluffy cupcake but these are made the old-fashioned way so they don’t have chemical ingredients that processed cupcakes do. They might remind you of a cupcake your grandma made.

Jubilant Cherries

Cherries that are a YES/Caution are Montmorency cherries. They are the same ones used in pies. This tastes just like pie filling. The color will be more pale because you will not be pouring in a bunch of red dye. You don’t need those chemicals in your system.

Peanut Butter Fruit Dip

This recipe contributed by Dieter Victoria. Victoria told us ‘With Memorial Day weekend right around the corner, I was trying to come up with a fun ”dip” for apples.

Raspberry Fool

This is one of my favorite, QUICK recipes for an impromptu dinner party.

Pumpkin Cheesecake

This tasted more like a smooth pumpkin pie than a cheesecake to me, but in either case I found it to be a heavenly option for a pumpkin dessert destined for Thanksgiving.

Pumpkin Mousse

Light and dreamy. If you like pumpkin you’ll love this smooth and easy dessert.

Peanut Butter Dream

Think peanut butter chiffon pie without the crust. For a low carb diet this is perfect.

Apple Pie Filling

We have never worked with fruit pectin in this diet. Plan Z dieter Amy came up with the idea to try it. Brilliant idea! This opens up a whole new world of opportunity for thickening.

Apple Chips

When we were at lunch the other day, Jen mentioned how dieters miss their crunch. She wondered if we could come up with a recipe for apple chips.

“Fried” Apples

Place on dish, sprinkle ¼ tsp of cinnamon over apple slices, and serve.
