My Mother’s Apple Crisp

There’s something about the potential of smelling apples baking with cinnamon and nutmeg that conjures up fond memories of my mother in the kitchen. She taught me as a small girl to make apple crisp so I did it often. This also makes a wonderful little breakfast the next day.

This frosting is light as a feather but it won’t break down like other whipped cream frostings because the cream cheese gives it an extra stability.

I have not perfected low carb baking yet but these are pretty good. They have a little denser texture than a light and fluffy cupcake but these are made the old-fashioned way so they don’t have chemical ingredients that processed cupcakes do. They might remind you of a cupcake your grandma made.
